BEAUJOLAIS BLANC Beaujolais blanc has always been on the Domaine du Vissoux tables for generations. Maurice Chermette, Pierre-Marie's father, vinified it in pieces and bottled it in a very traditional way without filtration for family consumption. The tasting of these old vintages left us with unforgettable memories. The color was golden and the wine a little cloudy with deposit and completely atypical! After a few tests of ageing in pieces, Pierre-Marie preferred to vinify this Chardonnay in stainless steel vats in order to leave it all its aromatic purity linked to the grape variety and the terroir, without any other interference.
Appearance Bright and clear. Nose Aromas of white flowers: hawthorn, honeysuckle, acacia. On the palate All in roundness, rich, persistent finish. Aromas of grapefruit, white peach or pear, sometimes apricot and in time honeyed notes..
Pairing As an aperitif, with starters / fish, tuna, salmon / white meats / poultry soufflé / cheese.

Grape 100% Chardonnay
Vines This cuvée comes from 3 types of soil which give this Chardonnay a complete character and also a certain aromatic complexity. 1/3 from granitic soil with Vissoux, which gives finesse to Chardonnay 1/3 from siliceous clay soil with Nandry at St Vérand 1/3 from chalky clay soil at Oingt, which gives depth to this grape variety. Reasoned cultivation, manual harvesting at full maturity, Guyot pruning. Direct pressing.
Wine-making process Slow alcoholic fermentation (3 weeks) at 16°C in stainless steel vats, without yeast, minimum SO2, no chaptalisation Maturing: stainless steel vat and 10% in acacia barrels.
Ageing advice Up to 4 years.
Serving advice Serve chilled at 10°C.
